Baked Eggs in Bread Bowls

Ingredients: 
2 large eggs
2 tablespoons heavy cream
2 crusty dinner rolls
2 tablespoons fresh mixed herbs of
your choice
Salt to taste
Pepper to taste
Parmesan cheese as required, grated 
Method: 
1. Cut the top of each of the dinner roll. Set it aside.
2. Scoop out some bread from the dinner roll so that a cavity is formed. (It should be big enough to fit an egg.
3. Break an egg into each roll. Sprinkle some fresh herbs over it. Spoon in some cream. Sprinkle salt and pepper. Finally sprinkle cheese over it.
4. Bake in a preheated air fryer at 350°F for 20-25 minutes or until the bread is toasted and the eggs are set according to the way you like it cooked.
5. After about 18 minutes of cooking,
place the tops of the bread that were set aside in the air fryer and bake until brown. Let the stuffed roll and the top sit for 5 minutes.
6. Remove the rolls and place on a plate. Cover with the tops and serve warm.

Ingredients: 
2 cups tofu, chopped into 1 inch cubes
1 medium onion, chopped
1 tablespoon olive oil
¼ teaspoon onion powder ¼ teaspoon garlic powder 1 tablespoon soy sauce
½ teaspoon ground turmeric 2 cups broccoli florets
1 heaped cup potato, chopped into cubes
Salt to taste 
Method: 
1. Mix together in a bowl, tofu, soy sauce, onion and garlic powder, onions, and ½ tablespoon oil and turmeric powder. Cover and marinate for at least 30 minutes.
2. Add potatoes in a bowl. Pour ½ tablespoon oil over it and toss.
3. Place in the air fryer basket.
4. Air fry at 390°F for about 15 minutes. Shake the basket once half way through cooking.
5. Add tofu (retain marinade) into the basket and toss it along with the potatoes.
6. Air fry at 370°F for about 15 minutes.
7. Meanwhile, mix together broccoli and retained marinade.
8. When the tofu is cooked for about 10 minutes, then add broccoli and toss. Cook for the remaining 5 minutes.
9. Serve hot.

Ingredients: 
8 cherry tomatoes, halved
6 eggs
2 tablespoons olive oil
2 tablespoons parmesan cheese, shredded
1 Italian sausage
Salt to taste
Pepper to taste 
Method: 
1. Add tomatoes and sausage to the baking accessory or baking dish. Place the baking dish in a preheated air fryer and bake at 350°F for 5 minutes.
2. Meanwhile add eggs, salt, pepper, oil and cheese to a bowl and whisk well.
3. Remove the baking dish and pour the egg mixture all over. Spread it evenly.
4. Place the baking dish back in the air fryer and bake at 350°F for another 5 minutes.
5. Slice into wedges and serve.

Ingredients: 
2 large bell peppers, halved lengthwise, deseeded
2 tablespoons cooked kidney beans
2 tablespoons cooked chick peas
2 cups oatmeal, cooked
1 teaspoon ground cumin ½ teaspoon paprika
½ teaspoon salt or to taste
½ teaspoon black pepper powder ½ cup yogurt 
Method: 
1. Place the bell peppers with its cut side down in the air fryer.
2. Air fry in a preheated air fryer at 390°F for 2-3 minutes. Remove from the air fryer and keep it aside.
3. Mix together the rest of the ingredients in a bowl.
4. When the bell peppers are cool enough to handle, divide and stuff this mixture into the bell peppers.
5. Place the stuffed bell pepper back in the air fryer and air fry at 390°F for 4 minutes.

Ingredients: 
2 eggs
1 cup Taiwan sausages, chopped into small pieces
¼ teaspoon maple syrup
¼ teaspoon balsamic vinegar ½ teaspoon Italian seasoning ½ teaspoon salt or to taste
1/8 teaspoon black pepper powder or to taste
2 slices whole wheat bread
3 tablespoons cheddar cheese
4-6 slices tomatoes
Cooking spray
A little mayonnaise to serve 
Method: 
1. Spray the baking accessory or baking dish (which is smaller than air fryer) with cooking spray.
2. Place the bread slices at the bottom of the dish. Sprinkle sausages over the bread.
3. Lay tomato slices over it. Sprinkle cheese over the tomato layer.
4. Break the eggs over the cheese (you can also beat the eggs and add if you wish).
5. Drizzle  vinegar  and  maple  syrup
over the eggs. Sprinkle Italian seasoning, salt, and pepper. If you like it cheesy, then sprinkle some more cheese on top.
6. Place the baking dish in the air fryer basket.
7. Bake in a preheated air fryer at 320°F for 10 minutes.
8. Remove from the air fryer. Serve with mayonnaise.

Ingredients: 
3.5 ounces ham, sliced
2 large eggs, refrigerated ½ pound baby spinach
1 ½ teaspoons olive oil
2 tablespoons full cream milk
Salt to taste
Pepper to taste
2 teaspoons unsalted butter, melted 
Method: 
1. Grease 2 ramekins with melted butter.
2. Place a skillet over medium heat. Add oil. When the oil is heated, add spinach and sauté until it wilts. If there is excess moisture in the skillet, then discard it.
3. Divide the spinach among the ramekins. Divide and place the ham over the spinach.
4. Break an egg into each ramekin. Pour tablespoon milk in each. Season with salt and pepper.
5. Air fry at 350°F for about 15 minutes or according to the way you like the eggs to be cooked.

Ingredients: 
4 eggs, beaten
1 small red bell pepper, finely chopped
2 tablespoons fresh parsley, finely chopped
4 tablespoons light cream Salt to taste
Pepper powder to taste 
Method: 
1. Mix together all the ingredients in a bowl.
2. Pour into small heatproof custard cups or ramekins. Fill up to half.
3. Place the cups in the air fryer basket and place the basket in the air fryer.
4. Air fry in a preheated air fryer at 390°F for 8 minutes.
5. If you like softer soufflés, then air fry for 5 minutes.
6. Serve hot.

Ingredients: 
½ cup fresh Shimeji mushrooms, sliced
2 eggs, whisked
A handful sliced Japanese silken tofu
2 tablespoons onion, finely chopped
1 clove garlic, minced Salt to taste
Pepper powder to taste Cooking spray 
Method:
1. Spray the baking accessory generously with cooking spray.
2. Add onions and garlic.
3. Air fry in a preheated air fryer at 350°F for 4 minutes.
4. Place tofu and mushrooms over the onions.
5. Add salt and pepper to eggs and whisk again. Pour over the tofu and mushrooms.
6. Air fry for another 20-25 minutes. Pierce with a toothpick a couple of times in between to check if the eggs are well cooked.

Ingredients: 
1 serving tofu scramble or vegan egg scramble
1 tablespoon cashew butter
1 tablespoons liquid smoke
2 pieces rice paper
1-2 tablespoons tamari
1 tablespoon water
For the filling:
A handful roasted sweet potato cubes
1 very small head broccoli, sautéed
4 strips roasted red pepper
A handful of greens of your choice 3-4 stalks fresh asparagus Salt to taste
Pepper to taste 
Method: 
1. Add cashew butter, tamari, liquid smoke and water into a bowl and whisk well.
2. Mix together all the ingredients of the filling in a bowl.
3. Hydrate the rice paper according to the instructions on the package. Place the rice paper on your work area.
4. Place the filling just before the center lime of the rice paper. Fold and seal. Dip this mixture into the cashew butter mixture and place on a lined baking sheet.
5. Place the tray in the air fryer. Air fry at 350°F for 8-10 minutes.

Ingredients: 
¾ pound potatoes, rinsed, cubed 1 onion, chopped ½ cup egg substitute
1 small green bell pepper, chopped ¼ teaspoon dried thyme ¼ teaspoon dried savory
1 teaspoon fat of your choice Salt to taste
Freshly ground pepper to taste
Cooking spray
Tomato slices to serve 
Method:
1. Add fat, onion and bell pepper to the air fryer.
2. Air fry at 350°F for 5 minutes or until onions are translucent.
3. Add potatoes, salt, pepper, savory and thyme and stir.
4. Air fry at 350°F for 15 - 20 minutes or until potatoes are tender.
5. Meanwhile, place a nonstick pan over medium heat. Spray with cooking spray.
6. Sprinkle some pepper in it. Let it remain in the pan until fragrant. Add the egg substitute and cook until set. You can use eggs instead of egg substitute.
7. Remove the cooked egg on to your work area. When cool enough to handle, chop into pieces.
8. When the cook time is over, add the egg pieces into the air fryer and stir.
9. Air fry for 4-5 minutes.
10. Serve with tomato slices

Ingredients: 
8 eggs, separated
½ cup chives
6 strips cooked bacon, crumbled ½ cup parmesan cheese, shredded Salt to taste
Pepper powder to taste 
Method:
1. Whisk the egg whites until stiff. Add cheese, chives and bacon and
fold gently.
2. Line a baking sheet with parchment paper. Make 8 mounds of the egg whites. Flatten the mounds and make wells in the center.
3. Bake in a preheated air fryer at oven at 390°F for 5-6 minutes. Add a yolk in each of the wells. Sprinkle salt and pepper.
4. Bake for some more time until the yolks are set.

Ingredients: 
8 small button Mushrooms, quartered
8 cherry tomatoes, halved
6 slices honey shaved ham
2 eggs
½ cup cheddar cheese
1 sprig rosemary, chopped (optional)
Salt to taste
Pepper powder to taste
Salad greens to serve
A little butter, melted - for greasing 2 whole wheat croissants 
Method:
1. Grease the baking accessory or a baking dish that is smaller than the air fryer with melted butter.
2. Layer all the ingredients (except cheese) in any way you desire and finally top with cheese.
3. Make 2 small wells (cavities) in the ham layer. Crack an egg into each of the wells.
4. Season with salt and pepper. Sprinkle rosemary all over.
5. Place  the  baking  dish  in  the  air fryer basket. Place the croissants in the baking dish as well.
6. Bake in a preheated air fryer at 320°F for 8 minutes.
7. After 4 minutes, remove the croissants. You can remove it earlier if you like it less crunchy.
8. You can adjust the timing according to the way you like your eggs to be cooked. Set lesser time if you like the eggs runny or slightly more time for half cooked eggs or more time for well cooked eggs.
9. To serve: Place the croissant on a serving plate. Place the baked ham and eggs over it. Place salad greens on the side and serve.

Ingredients:
1 large onion, chopped
2 tablespoons cheddar cheese, grated
3 eggs
½ teaspoon soy sauce Salt to taste
Pepper powder to taste Cooking spray
Multi grain bread to serve 
Method:
1. Whisk together eggs, salt, pepper and soy sauce in a bowl.
2. Spray a small pan that is smaller than the air fryer and which fits inside the air fryer with cooking spray.
3. Add onions and spread it all over the pan and place the pan inside the air fryer.
4. Air fry at 350°F for 6-7 minutes or until onions are translucent.
5. Pour the beaten egg mixture over the onions. Sprinkle cheese over it.
6. Air fry for another 5-6 minutes or until the eggs are set.
7. Remove from the air fryer and serve with toasted multi grain bread.

Ingredients: 
4 eggs
½ avocado, sliced 6-8 slices turkey or chicken breast ½ red bell pepper, sliced
¼ cup mozzarella cheese, grated
Salt to taste
Pepper to taste
2 tortillas
4 tablespoons salsa + extra to serve 
Method: 
1. Spray a small pan or baking accessory of the air fryer with cooking spray.
2. Whisk eggs, salt and pepper. Pour into the prepared pan.
3. Place the pan in the air fryer. Air fry at 390°F for 5 minutes. Remove the pan from the air fryer. Remove the egg from the pan. Cut into strips.
4. Place aluminum foil in the air fryer tray.
5. Place the tortillas on your work area. Place a few egg strips, chicken or turkey slices, avocado, bell pepper and cheese. Spoon some salsa. Wrap it up and place it
in the prepared tray with its seam side down.
6. Place the tray in the air fryer. Air fry at 350°F for 3 minutes.
7. Serve with salsa.

1 onion, sliced
1 tablespoon olive oil

½ teaspoon horseradish sauce
1 tablespoon crème fraiche
1 hot smoked trout fillet
Salt to taste

2 tablespoons fresh dill, chopped 
Method: 
1. Place a skillet over medium heat. Add oil. When the oil is heated, add onions and sauté until translucent. Transfer into the baking accessory. Place the trout over it.
2. Whisk together in a bowl crème fraiche and horseradish. Pour over the onions. Sprinkle salt and pepper over it.
3. Air fry in a preheated air fryer at 320 F for 20 minutes or until set.
4. Sprinkle dill all over it. Slice into wedges and serve.

Ingredients: 
1 large egg
1 thick slice sour dough bread ½ teaspoon vanilla
2 teaspoons butter
Drizzle of honey
½ cup mixed berries
Low fat plain Greek yogurt to serve 
Method: 
1. Add eggs and vanilla into a bowl and whisk well.
2. Apply butter on both sides of the bread.
3. Dip the bread into the egg mixture until the bread absorbs the egg.
4. Gently lift the bread and place it in the air fryer basket.
5. Air fry in a preheated air fryer at 355 F for 6 minutes. Turn once half way through cooking.
6. Place on a serving plate. Top with berries and yogurt. Drizzle honey over it and serve.
